It is unfortunate that I cannot find peanut butter chips here in Germany or at least from where we live. We brought 2 packs of peanut butter chips last December and I have already used them all up :( For some reason even the chocolate chips here are way bigger and flatter than the ones I could find in Singapore. So I usually chop blocks of chocolate if I need anything with chocolate chip. That could be a handy tip if you cannot find any chocolate chips!
These cookies are so soft and chocolaty. Almost like brownie cookies. I made them small enough to fit in your mouth ( teaspoon drops of cookie dough) and not too sweet so that there is no way you can overeat them. Unless you are like the Husband who stuffed 2 cookies every “bite”. I read from somewhere that you could make these cookies soft and chewy by lifting the baking pan together with the cookies and dropping them after they are done. Doing so flattens the cookies and gives them beautiful cracks. I tried them with these cookies and they turned out great! Just look at the inside of the cookies. So soft and fudgy!
Recipe adapted from allrecipes
Make 24 cookies
1 cup (225g) butter
1 cup (200g) white sugar
2 cups (250g) all-purpose flour
2/3 cup (55g) unsweetened cocoa powder
3/4 teaspoon baking soda
1/2 teaspoon salt
2 cups (510g) peanut butter chips
Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
In a medium bowl, beat the butter and sugar until butte turns pale in colour. Add in the eggs and vanilla.
Mix the flour, cocoa, baking soda and salt in another bowl then stir into the sugar/butter mixture.
Fold in the peanut butter chips. Drop cookies by heaping teaspoonfuls onto the prepared cookie sheets.
Bake for 8 to 10 minutes in the preheated oven, until set. Gently lift the baking tray a couple of centimetres off you work surface and drop the tray (with cookies in them). Do this twice. This flattens the cookies and makes them soft and chewy. Let it cool for about 5 mins in the pan then remove and cool complete on a cooling rack.
