Homemade Rosti

We love a hearty breakfast over the weekend and usually we will spend some time on saturday and sunday to make sure we have a great start into the day. During the week the Wife will leave the house early and will have breakfast in the office and the Husband usually just grabs a bowl of Müsli before starting the day. Having the chance to cook a nice breakfast dish over the weekend makes up for the missed opportunities during the week.

Thin crispy rosti

Ingredients for 2 pax

Rösti

  • 2 large potatoes
  • Salt
  • Pepper
  • Oil

Bacon

  • 4 slices of bacon

Fried Eggs

  • 2 eggs
  • Salt
  • Pepper
  • Oil

Sliced Avocado

  • Avocado

Instructions

Rösti

  1.  Peel the potatoes and get your grater ready
  2. Grate the potatoes into medium sized strips
  3. Soak the grated potatoes in water to remove starch, drain the water and dry the grated potatoes as much as possible
  4. Heat a pan to medium-high heat and add oil (bottom of the pan should be completely covered)
  5. Form the grated potatoes into discs (roughly the size of your palms)
  6. Place the discs into the pan and add salt and pepper on top
  7. Fry until edges turn golden brown and crispy and flip the disc to continue from the other side
  8. Handle the Rösti gently so that they don’t fall apart
  9. Remove the Rösti from the pan and place them on a kitchen towel until the rest of the breakfast is done

Bacon

  1. Preheat your oven to 180°C (360°Fahrenheit) on vent or top and bottom heat
  2. Place the bacon on parchment paper and put into the oven for 10-12 minutes or until crispy
  3. Remove the bacon from the oven once it is cooked through and rest on a kitchen towel

Fried Egg

  1. Heat a pan to high heat and add oil (oil should cover the bottom of the pan)
  2. Fry the eggs on high heat until egg white starts to bubble and edges become crispy
  3. Add salt and pepper to taste and remove from pan

Sliced Avocado

  1. Split avocado in half and remove seed
  2. Slice avocado while still in the skin
  3. Remove avocado by scraping a spoon on the inside of the avocado skin
