Burger without the carbs. This is pretty similar to the steak salad we made the other time. Instead of a pricey piece of steak, why not burger patties? It is effortless to make and easy to put together on a weeknight.
To be honest I am not a big fan of having salad as a meal. It often leaves me feeling rather sad and cold. Adding a meat, warm and juicy meat makes the cold salad a more welcoming meal. You get the protein and the fiber minus the carbs. We used ready mixed & washed salad in a bag and threw in additional cucumbers to add more crunch. If you are not too lazy, like us, you could use any of your favourite salad mixture. For the meat we made it exactly the same way you the naked burger.
2 person
Burger:
500g minced beef, divided into 4 patties
Salt
pepper
Dressing:
handful of mint, finely chopped
juice of 1 lemon
1 tsp brown sugar
1 tsp fish sauce
1/2 medium sized birds eye chili
Olive oil
Salad:
175g salad, of your choice (we used a bag of mix and washed salad, that had lettuce, carrot, corn, lollo Bianco)
1/4 cucumber, chopped
Season both side of the meat with salt and pepper.
Heat a large frying pan on high (sizzlingly hot). Place patties in pan and fry each side for 4mins. Once done remove and let patties rest for 4 mins.
In the mean time prepare the dressing by mixing the mint, lemon juice, brown sugar, fish sauce, chilli and 2 tbs olive oil in a bowl.
Add the salad and chopped cucumber in a large mixing bowl together with the salad dressing. Mix well and add more olive oil if need.
Enjoy your burger and salad!
