Don’t you have one of those weekday nights when you wanna eat something quick and unhealthy? We have them pretty often whenever there is an OD of healthy food. Found this “recipe”, which is actually called breakfast burrito, online.
This is sooo quick and easy to make and we happen to have all the ingredients at home that evening! Here goes….
It will feed 2 hungry people for dinner or maybe 3-4 people for breakfast?
1 spring onion*
Chop chorizo into cubes and fry till golden brown/ slightly crispy. Beat the eggs and pour the eggs over the chorizo into the same pan.
Fry the egg and chorizo like an omelette. When eggs are cooked, remove from heat and chop into chunks.
Heat the tortilla in an oven or a microwave.
Assemble: Place egg and chorizo on the tortilla together with a handful of cheese. Or as much cheese as you like! Sprinkle some spring onions if you like ( *you could leave it out if you don’t like it) Wrap the tortilla and EAT!
Eat it with any dips you like, I had it with salsa. You could also have it with sour cream.
