The last couple of weeks the Husband and I have been pretty caught up with work and have not (to be honest) made anything for dinner. I was really sick of eating out and really wanted to have something home made for dinner. Albeit tired after work, I made this really quick and easy pasta dish that really anyone can make. Chorizo-Bacon fried Zucchini Linguini.
This is really really really easy. It takes about as long as it takes for you to boil/ cook your pasta. AND whats not to love about bacon?! If you don’t have any chorizo. You can stick with bacon only. No sauce no fuss. No Zucchini? Go get some! Kidding…I am sure you could also leave that out. I have made chorizo pasta that is pretty similar to this. 200g bacon, cut in strips
50g chorizo, chopped
1 medium size zucchini, chopped
1 clove of garlic, roughly chopped
30g parmesan, grated
handful parsley, chopped
Start boiling water in a big pot for the pasta. Add salt when water starts to boil.
In the mean time chop the bacon and chorizo. Heat a pan on medium- high, add the chopped bacon and chorizo. Pan fry till crispy and until the bacon fat melts away.
By now the water should be boiling, so add the pasta into the pot. Cook for about 11mins.
Remove the Bacon and chorizo from pan and set aside. Leave the oil in the pan.
Add chopped zucchini to the same pan, reduce heat to medium. After a min, add chopped garlic.
Return chorizo and bacon to the pan and add linguini to the pan. Add parmesan, parsley and black pepper. Mix well.
If you find the pasta a little too dry drizzle some olive oil.
If your pasta is not ready yet, turn off heat when the zucchini is done.
