Made this a while back when there was nothing much left at home to eat other than these ingredients sitting around at home. What do you do? Find something as a base, in this case I used couscous because they are so quick to prepare and throw everything into a salad bowl.
To be honest I had no idea how the outcome will be. I simply added a little bite of this, tasted then a little bite of that, fine tuning the taste till I find the perfect combination! You may not think that these ingredients can’t get along but they do! Sometimes I am glad we started this blog also because we try so many things and sometimes we simply forget what we made. So this food blog kinda helps us to keep a record of our past cooking!
1/2 cup couscous (raw)
2 Generous handfuls of spinach
1 tin of tuna in olive oil
1 tomato, chopped
a handful of dried tomatoes, chopped
1/2 tsp garlic powder
1/2 tsp cumin seeds
Prepare couscous according to the box. ( It should be 1:1 hot water to couscous ratio)
Place spinach in a sieve and pour boiling water over the spinach to soft/semi-cook them. Set aside
When couscous is ready, fluff couscous with a fork. Then add all the ingredients into a big bowl. Season with salt and pepper.
