What I miss about Asia. Green Tea. There is green tea flavoured everything. Green tea chocolate, bread, cake, cold drinks…everything! Bought some green tea powder last year and made Japanese green tea chiffon cake. There are still some left over and decided to bake this Matcha Green Tea Pound cake.
Matcha Green Tea Pound Cake Recipe
Made them at 10pm at night for my colleagues, well and I was really craving some green tea cake myself. The preparation time was less than 20mins and you really do not need to have a lot of skills to bake them. Pretty difficult to go wrong baking them. What you do need however is some good quality green tea powder for them to taste good.

They were moist the next day when we had them. I dusted some icing sugar before serving just to make them prettier. You really don’t need them. I reduced to sugar amount to make them less sweet.
Matcha Green Tea Pound Cake Recipe

This recipe is from Vintage Mixer. Bakes one loaf.

1/4 cup (57g) butter

3/4 cup (150g) sugar

2 large eggs

1/2 cup (120g) milk

1 teaspoon vanilla (or 1/2 vanilla sugar)

1 cup (128g) flour

1 tablespoon matcha green tea powder

1 teaspoon baking powder

1/4 teaspoon salt

Preheat oven to 325 degrees (160 degrees C). Line loaf pan with parchment paper.

Using a mixer, cream together butter and sugar till light and pale and fluffy.

Add milk, vanilla, eggs, and beat until well combined.

In a separate bowl mix and sift (optional) the flour, matcha powder, baking powder, and salt. Add flour mixture to egg mixture and blend until smooth.

Pour batter into prepared loaf pan and bake for 45-50 minutes or until golden brown on the outside and a toothpick comes out clean.
