Sundays are usually bingeeatingcouchpotatoe day. We usually end up ordering pizza for dinner or some food delivery. Until I stumbled onto a website with top things to make in a slow cooker. If you don’t have a slow cooker its about time you invest in one! Well at least I think its the perfect equipment for week nights. When you want to have something warm and tasty for dinner but not want to spend a ton of time.
Okay back to Sundays, because we are usually so tired from doing nothing we usually don’t cook, but with this Slow Cooker Red Thai Curry recipe, we simply prepared everything in the morning, when we are still full of energy and enjoy the meal in the evening!
Its the same on weeknights! Before leaving for work simply prepare the meat and dump everything in the slow cooker. Viola! Awesome curry for dinner. Great for the coming winter. (Not looking forward to that!) We found this recipe from MyRecipes.com and modified it a little because the Husband loves to add his touch to every recipe. Yes when I said we I meant the Husband, because he technically made it, I was there to clean up.
It was enough for 3-4 people served with rice.
800g lean beef stew meat
1/8 teaspoon salt
2 cups finely chopped onion (1 onion)
4 garlic cloves, minced
3/4 cup lower-sodium beef broth
3 tablespoons red curry paste
2 tablespoons fish sauce
2 tablespoons fresh lemon juice
1 (13.5-ounce) can light coconut milk
1 jalapeño pepper, minced
2 cups long bean
Heat a large nonstick skillet over medium-high heat. Add beef; cook 5 minutes or until browned, stirring occasionally. Drain. Place beef in an electric slow cooker; sprinkle with salt.
Add onion and garlic. Combine beef broth and next 6 ingredients (through jalapeño); pour over beef. Cover and cook on LOW for 6 hours.
Stir in long beans. Cover and cook on LOW for 15 minutes or just until the beans are soft. Serve beef mixture over rice.
