If you are searching for a no recipe roasted chicken this is one that could help inspire you. I know that sounds weird but this is a “recipe” inspiration because you can basically add anything you want plus the chicken and viola you have a roast chicken dish for dinner. Its really fail proof and super easy to make. Read on to get inspired.
The key ingredient is the chicken. I like chicken thigh because it stays tender and juicy unless you really overcook them. But that it pretty difficult. What comes next is really up to you. I added whatever vegetables and herbs that were in my fridge. Cauliflower, tomato, and rosemary. And some other basic must haves for roasting chicken that is onions which becomes really sweet and naturally good quality olive oil.
This is the perfect dish when you have a party. Simple pop everything in the oven. Well almost. I baked the vegetables first to soft them slightly before adding the chicken to finish off the baking. Whilst baking the tomatoes will explode and mix with the juice from the chicken creating its own gravy. Oh yes and I added a dash of lemon juice and whole lemon to brighten the dish.
I did not want to waste the gravy so I had them with couscous, only because couscous is really quick to prepare. You really don’t need much seasoning for this. The natural sweetness from the caramelised onion and the juicy savoury juice from the chicken together with the bright and slightly tangy lemon / tomato combination is simplicity at its best.
2 small onions, quartered
150g cherry tomatoes, halved
1/4 cauliflower, roughly chopped
juice of half a lemon
2-3 sprigs rosemary
2 large chicken tight.
Preheat oven to 425 degree f (218 degree C)
To a baking pan ( mine was 8×8 inch square pan) add chopped onions, cherry tomatoes, cauliflower, juice of half a lemon, olive oil ( enough to coat vegetables), leaves of 1 sprig of rosemary and season with salt and pepper. Toss everything together and mix well.
Nestle chicken in the vegetables together with a drizzle of olive oil, season with salt and pepper then place 1 sprig of rosemary on each thigh and bake in the oven for another 30-45mins till chicken is cooked through. ( When the juice from the chicken after piercing runs out clear.)
