This is a recipe that will require minimal dishes to wash. All you need is a pan and maybe a big bowl to prepare this. Simply put everything in a baking pan and pop it in the oven. Thats all the “cooking” you need to do. The smoky part comes from the smoked paprika which balances out the sweetness of the sweet potato.
This is a dish that is both savoury and sweet. Sweet- sweet potato. Savoury- bacon and smoked paprika. The chicken makes this a more substantial dish to have as a main for dinner. I served it with boiled broccoli which was enough to feed the Husband and I for dinner. You could have it with rice if you really need more. I prepared this on a week night when our dishwasher stopped working one fine day. (It is still not working!!) Just because we are really lazy people when it comes to doing the dishes.
The broken dishwasher has definitely inspired us to create dishes that requires less washing up. So if you have any recipes that requires minimal washing please share with us because we have no idea when it will be fixed :/
3 sweet potatoes, peeled and cubed
450g chicken breast, cubed
1/4 cup olive oil
1 tbs garlic powder
1/2 tbs smoked paprika
Chili flake (optional)
150g bacon strips
2 spring onion
Preheat oven 425 degree f (220 degree C).
In a large bowl add the chopped sweet potato, chicken, oil, garlic powder, smoked paprika, salt, pepper and chili flake. Mix well, pour all the ingredient into the baking pan then pop it in the oven for 15mins.
Remove pan from oven add the bacon strips. Mix all all the ingredient well and return the pan to the oven and roast for another 10mins.
Remove pan and add chopped spring onion. Return to oven and roast for another 3mins.
I served it with boiled broccoli.
