Quick tuna wrap with capers and dried tomatoes. This is a great dish to prepare for a weeknight or the day before for lunch! You could turn this tuna wrap into a tuna salad if you skip the wrap and add more salad.
I like how the tangy capers and slightly tart tomatoes lightens the taste of tuna. The rucola (rockets) adds a slight peppery note and crunch to the wrap. You could switch out the rucola for some other salad of your choice, if you are not a big fan of rucola. To turn this tuna wrap into a salad, you could add more olive oil, and also perhaps a dash of balsamic vinegar, but of course this is optional. I could also imagine having this sandwiched between two crispy baguette.
It takes no time to make. You could make it in advance, keep it in the fridge for up to 2 days then have it for lunch or dinner!
1 can tuna
1 tsp capers, finely chopped
5-6 dried tomatoes, roughly chopped
2 green onions, chopped
1tsp olive oil
In a bowl mash tuna with fork. Then add chopped capers, chopped dried tomatoes, chopped green papers, olive oil mix well. Then season with salt and pepper. You could add more olive oil if you find the mixture too dry.
Wash and dry the rucola.
To assemble, place the wrap on a plate, then add the rucola followed by 2 tbs heaps of the tuna mixture. Roll tight!
